1. Create your own course:
We have created several courses for you, but you can modify a course to fit your desires. Let us know your interests at info@chocolateworld.be, and we will create the perfect lesson based on your wishes.

Some examples:

  • Decoration and garniture:
    Let’s go back in history, to a time where you could see the most beautiful writing on the chocolates. Nowadays, most people do not take the time anymore to do this properly, or have never learned how to do it. With this skill in the bag, people will be amazed with the beautiful lines with which you decorate your designs. Besides writing on pralines already prepared for you, we will teach you a plethora of other decoration techniques as well.
  • Hollow moulds:
    How do you get different shades of colour in a shape? How to create stunning effects? What is the right thickness for different moulds? How to get the right thickness? These questions and any other things you have always wondered about will be handled during this lesson.
  • Seasonal creations:
    Christmas, Valentine’s Day, Easter,… We all have our favourite chocolate-holiday, and this session will bring them all into focus. Please make sure to tell us your interests in advance, so we can prepare an interesting lesson designed to your likes.
  • Showpiece – Techniques
    During this session you will learn to create stunning centrepieces, by using more than just standard moulds or hollow figures. Once again, if you can think it, you can make it! Chocolate sculpting, more technical creations, like buildings, or more finely detailed pieces, like jewellery. Provide us with the details what you want to create, and we will prepare some things for you to start with.
  • Coating

2. Tempering – Moulding – Filling:
There are several different options when you want to temper chocolate, by hand or by using a machine. In this part of the lesson you will learn both ways, and see which one you prefer. You will learn how to make your chocolate nice and crispy, with that delicious looking shine specific for high quality chocolates. Now you are ready to mould. During this section, you will learn how to get the perfect thickness for your pralines, depending on the kind of filling you would like to use. While the moulds are cooling off, we will make a ganache or crème to get ready for the final step of the lesson: the filling. You will learn how to dose the right amount, and how to close your chocolate seamlessly.

3. Colouring techniques for chocolates:
Picture this… a beautiful shiny praline, shades of red, with specks of orange and a hint of yellow. Your only limit is your imagination. Besides Airbrush there are several other techniques to create stunning chocolates that will lift your chocolates to the next level.

Duration: 3 hours

4. Truffles:
We start by making a couple of delicious truffle fillings, which we will cover in chocolate. This process can be done by hand or by using a machine, both are possible options. We continue by choosing the right finishing touches, and voila, your own perfect truffle!

5. 1-day moulded pralines introduction:
Let’s start from the very beginning, a very good place to start. Starting with the tempering, we will proceed with the moulding by machine. After working on this technique, you will learn to create some lovely fillings, based on your preferences. When you have mastered these skills, you can take your first steps in the delicious World of Chocolate…

6. 1-day moulded pralines advanced:
We will take things up a notch during these sessions. There should not be any issues with moulding, so the main focus will be colouring: airbrush, powders, sprays,… all will be discussed. Adding some other fillings as well to create some beautiful masterpieces, and you will blow your friends away with your newly acquired skills.

7. 2-day moulded and enrobed pralines advanced:
DAY 1: We will take things up a notch during these sessions. There should not be any issues with moulding, so the main focus will be colouring: airbrush, powders, sprays,… all will be discussed. Adding some other fillings as well to create some beautiful masterpieces, and you will blow your friends away with your newly acquired skills.
DAY 2: Let’s start using the enrobing line. First we will prepare some decorations, then we can start working with our fillings: cutting them in different shapes, covering them in chocolate and applying the finishing touches to make your perfect pralines come to life.

8. 4-day professional:

All these items will be handled, we will ensure to teach you the full range of options during this week. Make sure to let us know if you want to change some things, or if you want to focus on a particular aspect!

Note: During the courses we will be working with Belgian high quality chocolate brands, such as Callebaut and Belcolade. We can offer special courses upon request, like working with bean to bar chocolate, bio, gluten free, lactose free or vegan products, under the condition you personally bring these specific products with you. Our chef will be delighted to discuss this in advance, in order to get the most out of your training.

Minimum age for booking courses at the Belgian Chocolate School: 16 years
